This all-purpose blend is as integral to Middle Eastern, particularly Lebanese, cuisine as garam masala is to Indian cuisine. Also similarly to garam masala the blends of baharat are individual to every region. It can be used as a bbq rub for meats, seasoning meat in the pan before stewing or as a garnish on a meal before serving.

How to use:
Use to enhance the flavour of lamb, fish, chicken and beef
Use in tomato sauces, lentil dishes, meatloaf, vegetable dishes and soups
To create a marinade combine with olive oil and lime juice
Use 1tbsp to 500g of protein
To release the volatile oils in the spices, this blend it best added at the beginning of cooking
Use as a dry rub over meat before grilling or roasting for an aromatic outer crust

Chilli Ancho means “wide chilli” in Spanish and it is actually a dried Poblano pepper. They are a large dark purple sweet chilli that form the backbone of staple dishes such as tamales & red chilli beans. Its texture is wrinkled and it is a mild chilli originally from Puebla, Mexico. Also, it is a common and key ingredient in Mexican cuisine. It has a mild fruity flavour with undertones of plum, raisin, tobacco and a slight earthy bitterness. Add Chilli Ancho Dried Whole to your dishes to impart an authentic Mexican flavour.
Chipotle (chip-oat-lay) peppers are smoked, dried Jalapeño chiles. They appeared when the Aztecs used to add dried chilli to food as a preservation method. They have a rich smokey flavour, with nutty, leathery notes that blend well with strong flavours. Chipotle flavouring is widely used throughout Mexico, the United States and more recently in Australia. It can be used in soups, stews and casseroles. It also has a variety of health benefits to defend against intestinal diseases and aid in weight loss.
Juniper Berries are obtained from the small evergreen juniper tree. The dried berries have a dark blue colour, fresh spicy tart flavour and pine aroma. Juniper has a special affinity with venison and other robust game meats. Used in European cuisine.
Spanish paprika sweet is made from ground red pepper has a rich red colour while retaining a mild flavour which complements most savoury dishes. Due to its vibrant colour and full bodied flavour it is used in many European and Indian dishes. It gives a subtle caramelised sweet warmth to dishes and it is a core ingredient in our North Africa Chermula.
Black Pepper is picked from the flowering vine of the peppercorn plant and is the most pungent and flavoursome variety of Pepper. Black peppercorns are picked green and then dried to 12% moisture content.Its colour when ground is grey as the seed inside is white. It has a woody flavour with a spicy heat and it is used in all cultures and types of cuisine especially in Moroccan and Middle East cooking. Pepper is used in all cultures and all types of cuisine. Also, it is known for improving the digestion.
